During this time, I started researching the Whole Foods Plant Based (WFPB) diet and became hooked, especially after watching the Fork Over Knives documentary. Then became annoyed from all the articles and videos that made this diet out to be strictly vegan... it’s not. By the true definition of this diet, you have the option of cutting out animal based foods completely or just minimizing it. Though the medical doctors encourage cutting it all out. After discussing it with my boyfriend and telling him about all the information I had found, he decided to jump on board with me. We both agreed to minimize our animal based foods, not cut it out. Though, I will be cutting out more than him. He had started to eat a little healthier in the last few weeks as well, then he got his blood pressure checked. Initially, he was happy that it had gone down since the last time which is now 133/97, but he wanted to get it down even further, down to a healthier range. Thus, begins our 28-day blood pressure challenge.
Through our research of the WFPB diet, there was a wealth of information on how this way of eating can improve multiple health issues including high blood pressure. We were curious about how this way of eating would impact our own health and wanted to do our own little experiment. We took initial measurements which included weight, body measurements and blood pressure. I started researching recipe ideas and my boyfriend started figuring out ways to tweak our current meals to fit this lifestyle better.
